Tasty Tofu Bites

Yesterday, I made a really delicious roast veggie buddha bowl and instead of beans or meat, I seasoned and baked a batch of tofu. And it turned out so well!
So well, in fact, that we ate it all before I got any pictures... But at least I have the recipe.
Tasty Tofu Bites
Ingredients:
Extra firm tofu
2T Rice Wine Vinegar
2T Olive Oil
1-2tsp Honey
1/2tsp Chili Powder
1/8tsp Garlic Powder
1/8tsp Onion Powder
1/2tsp Worsesterchire Sauce
1/2tsp Chicken Bouilon (use Vegetable bulioun for vegetarian)
1/8tsp Pepper
Instructions:
Freeze and thaw your tofu.
This is an optional extra step, but for some reason, I really prefer the texture of the tofu when it's been frozen and then thawed again. It feels a lot meatier and seems to soak up the marinade better.
If you don't want to freeze and thaw your tofu, just factor in some additional time to let your tofu marinate.
Once your tofu is thawed, cut it into bite sied pieces, patting off any extra liquid, and place them in a bowl.
In a seperate bowl or measuring cup, mix together the other ingredients, adjusting the spices to taste.
Pour the marinade over the tofu, make sure it is completely coated, and let the tofu sit for 20-30min or longer. You can even marinate the tofu ahead of time to save time later. Prep the tofu in the morning and then pull it out when you're ready to cook dinner.
Preheat your oven to 375F.
Spread the tofu evenly on a baking sheet and bake for 15 minutes.
Check on the tofu and stir with a spatula before baking for an additional 15-20 minutes.

I cut my tofu into pretty small cubes - like 1/2" cubes, so you might need to bake your a bit longer depending on the size.
Anyway, they were really tasty and I'm already thinking about making more.
